Food & Beverage Director – Luxury Hotel

About the role

The Food & Beverage Director provides strategic and operational leadership for all food and beverage outlets of Serena Hotels in Kampala. The role is accountable for delivering exceptional guest experiences while driving profitability, innovation and sustainability across restaurants, bars, banqueting, room service and kitchens.

Key responsibilities

• Define and communicate the F&B vision, mission and core values, ensuring alignment with Serena, LHW and LQA standards.
• Collaborate with the General Manager, Executive Chef and Sales & Marketing to create innovative dining concepts, themed events and promotional programmes.
• Oversee quality, consistency, presentation and service standards across all outlets, including menu development and banquet packages.
• Drive revenue growth and market share by introducing new concepts, managing pricing strategies and monitoring competitor activity.
• Implement cost‑control measures, monitor inventory, minimise waste and manage budgeting, forecasting and financial reporting.
• Lead, coach and develop multidisciplinary teams, ensuring clear performance plans, regular reviews and a culture of accountability.
• Ensure compliance with health, safety, food hygiene, licensing and sustainability initiatives.

Required profile

• Bachelor’s degree or diploma in Hospitality Management, Food & Beverage Management or a related field.
• Minimum 8 years of experience in food and beverage operations within a 5‑star international hotel, with at least 5 years in a senior leadership role.
• Proven track record managing multiple outlets, bars, banqueting operations and large‑scale events.
• Strong knowledge of restaurant, beverage, banqueting, room service and culinary operations.
• Demonstrated ability to develop innovative concepts, drive revenue growth and manage cost‑control strategies.
• Excellent financial, analytical and operational planning skills.
• Leadership experience inspiring large multidisciplinary teams and fostering a guest‑focused culture.
