Head Chef – Fine Dining Restaurant

About the role

The Lawns Restaurant, one of Kampala’s iconic fine‑dining venues, is seeking a world‑class Head Chef to lead its kitchen. The role involves overseeing culinary operations for a 300‑seat restaurant, creating innovative menus that blend African game meat with international flavours, and ensuring the highest standards of quality and service.

Key responsibilities

• Lead all culinary operations and uphold fine‑dining standards
• Develop innovative menus with strong African game meat and international influences
• Manage kitchen staff, including training, scheduling and performance evaluation
• Oversee food safety, hygiene and HACCP compliance
• Control food cost, inventory, procurement and supplier relations
• Ensure exceptional guest experience through consistent quality
• Collaborate with management on menu strategy and special events

Required profile

• 12–15 years of professional culinary experience
• Hotel Management qualification (mandatory)
• Minimum 5 years overseas experience in reputable hotels or fine‑dining restaurants
• Minimum 5 years restaurant‑specific experience
• Senior culinary experience in Africa
• Strong expertise in continental, European and African cuisine
• Proven leadership in high‑pressure, premium dining environments
