Commis (Kitchen Assistant) – Full-time

About the role

The Commis will support the kitchen team at Marriott’s hotel in Kampala by preparing meals, maintaining food quality, and ensuring smooth operations during service periods. This full‑time position reports to the Chef and collaborates closely with Food & Beverage staff.

Key responsibilities

• Prepare special meals and substitute items following recipes, presentation standards, and food preparation checklists.
• Regulate temperature of ovens, broilers, grills, and roasters and monitor food safety logs.
• Thaw frozen items in refrigeration, portion, arrange, and garnish dishes, and prepare cold foods.
• Maintain inventory records, inform the Chef of excess items for daily specials, and communicate menu specials or out‑of‑stock items to service staff.
• Assist with hiring, training, scheduling, and performance coaching of kitchen staff as directed by management.
• Follow all company safety, security, and hygiene policies, report maintenance needs, and ensure a clean, professional appearance.

Required profile

• Minimum three years of experience in a kitchen or food‑service environment.
• Technical or vocational education in culinary arts or related field.
• Ability to stand, walk, lift up to 25 lb, and perform repetitive motions for extended periods.
• Strong communication skills and a proactive attitude toward guest service needs.
