Food and Beverages Director

About the role

Serena Hotels is looking for a Food and Beverages Director in Kampala to provide strategic and operational leadership for all food and beverage operations, including restaurants, bars, banqueting, room service, kitchens and stewarding. The role delivers exceptional guest experiences while driving profitability, operational efficiency, quality, food safety and team performance, in line with Serena standards and luxury hospitality expectations.

Key responsibilities

• Communicate the F&B vision, mission and values, and collaborate with the General Manager, Executive Chef, Sales & Marketing and Banqueting teams on dining concepts, events and promotions.
• Ensure compliance with statutory, health, safety, food hygiene and licensing requirements, and with data protection and recordkeeping policies.
• Develop and implement F&B strategies, standardise menus, beverage lists and banquet packages, and lead conferences, weddings, VIP functions and large banquets.
• Drive revenue growth across restaurants, bars, banqueting and room service, and monitor competitor activity.
• Control costs through inventory monitoring, waste minimisation, portion and beverage control, and manage departmental budgets and financial reports.
• Manage people: performance plans, reviews, training, scheduling, staff relations and employee well-being.
• Support sustainability through waste reduction, energy efficiency, responsible sourcing and reduced single-use plastics.

Required profile

• Bachelor's degree or diploma in Hospitality Management, Food & Beverage Management, Hotel Management or a related field.
• Minimum 8 years in food and beverage operations in a 5-star international property, with at least 5 years in a senior leadership role.
• Proven experience managing multiple outlets, bars, banqueting operations and large events.
• Strong financial, analytical and operational planning skills, and proven leadership of large multidisciplinary teams.
