Hotel Cost Controller

About the role

Q-Sourcing, a manpower management solutions firm operating in East Africa, is recruiting on behalf of its hospitality client a skilled and experienced Cost Controller to work in Kampala. The role covers the hotel's operational financial control: cost management, inventory integrity, procurement compliance and profitability analysis across Food & Beverage operations. It works independently but collaborates closely with operational departments.

Key responsibilities

• Set up and maintain inventory control systems for food, beverage, operating supplies and consumables, run regular counts, monitor stock movements and minimise waste, spoilage and pilferage
• Review purchase requests against purchasing policy, compare market prices and support supplier negotiations through cost analysis
• Prepare recipe costing, conduct menu engineering and profitability analysis, and recommend menu pricing adjustments
• Produce daily, weekly and monthly cost reports, dashboards and management presentations, and analyse food cost, beverage cost, labour productivity and operating expenses
• Support annual budgeting and monthly forecasting, and monitor budget performance
• Strengthen internal controls, run periodic operational audits and monitor POS controls, voids, discounts and inventory adjustments
• Act as an operational business partner with the F&B Manager and Executive Chef, taking part in menu planning and promotional costing

Required profile

• Bachelor's degree in Accounting, Finance, Hospitality Management or a related discipline
• Minimum 3-4 years' experience as a Hotel Cost Controller
• International hotel experience preferred

Required skills

• Strong knowledge of inventory control systems
• Strong understanding of Food & Beverage operations
• Advanced Microsoft Excel
• Experience with POS and inventory management systems
• Analytical and commercial mindset, integrity and confidentiality, and strong communication and presentation skills
